Red Currant Muffins

These are one of my husband's favorite muffins! Pretty easy to make. We picked the currants at his parents' house the other day. I used a regular muffin recipe and cut the milk in half to replace it with Greek Yogurt...makes them moister. You can substitute the Red Currants for any type of berry.


Ingredients:
1 3/4 cup Flour
1/3 cup Sugar
2 teaspoons Baking Powder
1/4 teaspoon Salt
1 Egg
1/2 cup Milk
3/4 cup plain or Greek Yogurt
1/4 cup Oil
1 1/2 cups Red Currants

Directions:

Heat oven to 400 degrees.

Grease 12 muffin tins.

Whisk egg, milk, yogurt, and oil.
Add in flour, sugar, salt, baking powder. Mix to combine.

Add in Red Currants. Gently mix.

Pour into muffin cups.
Bake at 400 degrees for 18-20 minutes.
