I use a honey & water mixture instead of sugar. I dump in about 1-2 cups of honey to 1-2 gallons of water. The taste is up to you! You can also use a sugar syrup mixture. You can find those directions here: Ball Canning

Next Step: RINSE THE RIPE PEACHES

Next Step: BLANCH PEACHES IN BOILING WATER FOR 30-60 seconds

Next Step: ICE BATH THE PEACHES

Next Step: PEEL THE PEACHES

Next Steps:
Slice or Half the Peaches
Arrange in Quart Jars
Secure Lid & Rim

PLACE THE JARS IN THE CANNER WITH TONGS

BOIL FOR 23-35 MINUTES

REMOVE WITH TONGS

LET SIT FOR 24 HOURS

STORE FOR THE WINTER

ENJOY!!

  1. Canning peaches always reminds me of the end of summer. Alisa will recall the year a friend and I canned over 100 jars. Was an all day event, kids played in the yard, and the kitchen did survive the mess. We were exausted but this is a fond memory I will always cherish. I think this is where Alisa was paying attention and has developed a love of canning as well.
