Bacon & Egg Cups


This is a recipe my mom created! I jazzed it up a little with some onion, chive, and Siracha flavors!
It is quick and easy and a great on-the-go breakfast but also great for special occasions, too!





Ingredients
{makes 12}

6-8 Raw Tortillas 
{I get mine at Costco but cooked ones will work, too}

1 dozen Eggs

4 Scallions

6 slices Cooked Bacon
 {or 3/4 cup Real Bacon Bits}

3/4 Shredded Cheddar Cheese 
{any cheese will do}

3/4 cup Milk

1 tsp Siracha Chili Paste 
{optional}

2 tsp Salt

4 TBS finely diced Chives





To Make:

Preheat oven to 375 degrees. 

Slice Tortillas into quarters and line each greased muffin cup with slices. I make mine decorative by letting the corners stick up out of the muffin cup. Bake for 5-10 minutes if using raw tortillas. 

In a large bowl whisk all eggs. Then mix in remaining ingredients.

Use a 1/2 cup measuring cup to pour batter into each tortilla shell.

Bake for 20-22 minutes or until centers of each egg cup is set. 

Sprinkle with fresh chives and serve warm!

Basil BLTs for lunch today!


Had some extra bacon in the house today so I thought my husband might like some BLTs for lunch. We have an abundance of tomatoes and basil in the garden right now so I incorporated some basil! I made homemade french bread last night (recipe to come soon) so I used that for the sandwich bread.

INGREDIENTS
makes 4 small sandwiches

8French Bread or Crusty Bread, slices
8 Tomato slices or a 1 cup chopped small tomatoes
 4 Lettuce Leaves
 8 pieces Bacon
1/2 Mayonnaise or Plain Greek Yogurt
1/2 cup Fresh Basil Leaves
2 tsp Lemon Juice
1 clove Garlic
1 tsp Salt



DIRECTIONS

Start frying your bacon in a frying pan.

In the meantime, slice your 8 slices of bread. Slice your tomatoes. Prepare your lettuce leaves and basil.

Directions for Basil Mayo
Combine Basil, Mayo/Greek Yogurt, Lemon Juice, Garlic, & Salt in a food processor or small hand blender. Blend all ingredients together.



Slather each piece of French Bread with the Basil Spread.

Add a leave of lettuce.

Add 2 slices of bacon.

Add 2 slices of tomato or spoonful of chopped tomatoes.

Top with a leaf of fresh Basil.

Place other piece of bread on top.

Enjoy!

Man Food

Cheddar Bacon Guacamole Burgers
I know, I know...heart-attack on a bun! My husband has been working long hours lately and comes home hungry for a good, hearty meal. We've been eating a lot of vegetables and light summer meals lately so I thought I'd make him something filling...really filling! Bacon Guacamole Burgers are one of his favorite meals!

I start out by flavoring my meat.
I used half Elk burger and half Beef burger.
I add:
 1 clove grated garlic
1/4 cup grated yellow onion
1 tsp Siracha Chili Paste
Salt & Pepper

I use a micro-plane grater to grate the onion & garlic.

I form the patties and grill them then add cheddar cheese when they're done.


Guacamole
1 avocado
1 clove garlic, grated
2 tsp lime juice
Salt & Pepper
Mix together & serve on top of burgers.



Bacon
I use 2 strips of bacon per burger.

We also had corn & potatoes from the garden...so it was kind of healthy!
